History
Piacenza food specialties provide evidence that agriculture has always played an important role in this territory. Cured meat products are a flag of Piacenza food traditions and, in 1996, Coppa Piacentina PDO, Salame Piacentino PDO and Pancetta Piacentina PDO were awarded Protected Designation of Origin by the European Commission.
Each piece is a food masterpiece, not only for its unique flavour and taste, but also because it is the result of meticulous work carried out by hand and in compliance with strict standards and regulations.
The Piacenza Cured Meats Consortium was founded in 1971. In August 2007, the Piacenza PDO Cured Meats Consortium continued and strengthened the work previously carried out by the voluntary consortium dedicated to traditional Piacenza cured meats.
The task of the Consortium is to ensure compliance with the production rules, prevent any misuse of the designations Coppa Piacentina PDO, Salame Piacentino PDO and Pancetta Piacentina PDO, and promote Piacenza PDO cured meats.
Mission
In a time of globalisation and questionable lifestyles, standardisation is a concrete danger, even for the food industry. Countries like Italy, with their extraordinary wealth of food specialties, have a responsibility to defend and promote food traditions and the richness of flavour, taste and history they preserve.
The designations Coppa Piacentina PDO, Salame Piacentino PDO and Pancetta Piacentina PDO can be used only for cured meat products that comply with the rules and requirements set by the official production specifications, registered by the European Union under EU Regulation No. 1151/2012 and recognised by EC Regulation 1263/96.
Guarantee
The three Piacenza PDO cured meat products bear a special label as a guarantee of origin and compliance with the required production and quality standards.
The production area includes the whole Province of Piacenza, up to 900 metres above sea level.
The Consortium logo combines two symbols: the coat of arms of Cardinal Giulio Alberoni's family, a true ambassador of Piacenza food specialties, and a horn filled with Piacenza PDO cured meats.
