Origin of the pork and processing area

Pancetta Piacentina comes from the fatty pork cut known as pancettone.

The raw material comes from pigs born and reared in Emilia-Romagna and Lombardy, while production is limited to the province of Piacenza, where the climate is decisive for its characteristics.

Processing

The traditional production phases

  1. The process begins with salting: the meat is rubbed with a traditional mixture of salt and spices.
  2. A cold resting period follows, allowing salt and aromas to distribute evenly through the meat.
  3. After massaging, the pancette are rolled, tied and dried in dedicated rooms for 10 to 15 days.
  4. Once drying is complete, ageing begins and lasts four months.

The finished product has a cylindrical shape and weighs between 4 and 8 kg.
